I seal quite a lot of very tasty, sweet pickled tomatoes in jars for the winter. I use various recipes. Regardless of the composition and method of preservation, all preparations turn out very tasty.

Marinated tomatoes for the winter: very tasty, sweet


I always prepare these tomatoes. This recipe is used by my mother and grandmother. The most delicious recipe that is prepared without sterilization.

For sealing in 3 liter jars:

  • 2 kilograms of tomatoes;
  • 3 cloves of garlic;
  • A piece of hot pepper;
  • Large sweet pepper;
  • 3 pieces of horseradish root;
  • Horseradish leaf;
  • Dill bush with an umbrella;
  • 2 dessert spoons of salt;
  • A glass of sugar;
  • 2 tablespoons vinegar.

Classic recipe:

  1. Rinse the washed jars well and scald with boiling water.
  2. Tear the washed greens with leaves into pieces, cut the garlic in half, cut the pepper into quarters. Place all seasonings at the bottom of the jar. After washing medium-sized tomatoes, place them on top interspersed with pepper quarters.
  3. Pour boiling water over the prepared vegetables, cover, and let stand for about twenty minutes. Bring the drained liquid to a boil. While it is boiling, add salt, sugar and vinegar to the vegetables.
  4. Pour the boiling liquid into the bottle to the top and seal it. Place on the lid, cover with a fur coat, and leave until the next day.

We store it in the basement.

Sweet tomatoes: recipe for 1 liter of water


The peculiarity of this recipe is to marinate the fruits in halves. Therefore, fruits should be chosen that are firm and have thick skin. Ideally, large cream with a thick skin.

For 1 liter jar:

  • Green dill umbrella;
  • Large clove of garlic;
  • A pinch of hot peppercorns;
  • A thick ring of large sweet pepper;
  • 800 grams of tomato.

Marinade per liter of water:

  • Half a glass of salt;
  • Half a glass of vinegar;
  • A glass of sugar with a slide.

How to close:

  1. Place all the seasonings specified in the recipe at the bottom of the sterilized jar. Place washed, halved tomatoes on them, cut side down.
  2. Fill the contents of the prepared containers with boiled marinade.
  3. Place the jars in a sterilization container with a napkin at the bottom. Sterilize for five minutes from the moment of boiling.
  4. We roll it up, let it cool, and take it to the cellar.

On a note! The marinade is enough for 3.5 liters of volume.

Korean sweet pickled tomatoes


Korean tomatoes usually have a spicy taste. I suggest trying sweet and sour, not spicy, prepared according to a simple recipe.

  • A kilo of hard tomatoes;
  • Bulb;
  • 2 bell peppers;
  • 3 carrots;
  • Head of garlic;
  • Half a glass of sunflower oil;
  • A glass of sugar;
  • 30 grams of salt;
  • Half a glass of vinegar;
  • A bunch of greenery.

Preparation steps:

  1. Cut the tomatoes into quarters.
  2. Grate the carrots into strips.
  3. Twist onions, peppers, garlic, herbs.
  4. Place all the prepared vegetables in a bowl and add the rest of the ingredients. Carefully, but carefully, so as not to crush the tomatoes, mix the vegetable mixture.
  5. We put the workpiece into sterilized jars, cover with lids, and send for pasteurization. To do this, soak the workpiece in hot water for 15 minutes. It should be very hot, but not boiling.

Korean green tomatoes


Another Korean recipe for crispy pickled tomatoes for the winter for 1 liter, which is prepared from green fruits. I give a plan for preparing 1 liter of crispy green tomatoes with vinegar, and you adjust the quantity at your discretion.

  • 800 grams of green tomatoes;
  • 2 sweet peppers;
  • A small root of horseradish;
  • 300 grams of carrots;
  • Large clove of garlic;

For a liter of marinade:

  • 75 grams of sugar;
  • 35 grams of salt;

Tomatoes with prunes


This is a delicious preparation for the winter of sweet pickled tomatoes for 1 liter with vinegar and prunes.

We will need:

  • 700 grams of tomato;
  • 4 prunes;
  • Sprig of mint;
  • Large clove of garlic;
  • 500 milliliters of water;
  • Dessert spoon of salt;
  • Dessert spoon of honey;
  • 25 milliliters of vinegar.

Preparation:

  1. We take small, ripened tomatoes. We clean them from the tails, wash them, and pierce them on one side with a fork.

  • 700 grams of tomato;

  • A piece of parsley root, celery;
  • Clove of garlic;
  • Coffee spoon of mustard seeds;
  • Two carnations;
  • Coffee spoon of coriander;
  • Laurel leaf;
  • Half a liter of water;
  • 45 grams of salt;
  • A tablespoon of sugar;
  • Half a coffee spoon of citric acid.

Preparation:

  1. Place herbs, spices, garlic, parsley root and celery in a jar.
  2. We pierce the tomatoes on both sides.

- small tomatoes – 1 kg;
- old garlic – 4 cloves;
- bay leaf – 4 pcs.;

Marinade:
- clean water – 1 liter;

Wash the tomatoes and soak in cold water for 10 minutes.




Drain the water and pierce each fruit in several places with a wooden toothpick or skewer.




Throw chopped garlic, cherry and blackcurrant leaves, bay leaves and allspice peas into the bottom of a clean jar.




Place the tomatoes in the jar quite tightly, lightly pressing them against each other. Top with another clove of garlic and sweet peas.




Pour boiled hot water over the tomatoes in the jar. Cover and let sit while you prepare the marinade.




In a separate bowl, cook the marinade brine from water, sugar and salt. Bring to a boil and do not remove from heat. Cover the jar with a lid and pour the water into the sink - it will no longer be useful.




Fill the tomatoes in the jar with boiling marinade to the very edge.

Cooking method:

1. Prepare the jar, it should be clean and dry. Place washed dill, peeled garlic cloves, and chopped chili peppers into it. Next, fill it tightly with tight and clean tomatoes.

Ingredients:

  • Tomatoes - 2 kg;
  • Carrot tops - 150 gr.;
  • Bay leaf - 2-4 pcs.;
  • Peppercorns - 10 pcs.;
  • Cloves - 6 pcs.;
  • Water - 2 l;
  • Sugar - 4 tbsp. spoons;
  • Salt - 2 tbsp. spoons;
  • Vinegar 6% - 100 ml.

Cooking method:

1. Choose ripe tomatoes with firm flesh. There should be no damaged areas on the fruits.


Immediately before pickling, soak the vegetables in cold water, rinse and dry.

2. Take carrot tops, rinse them under running water and dry.


Carrot tops need to be fresh, straight from the garden. If you bought it at the market, first soak the greens in cold water.

3. Prepare the jars. Wash them in a baking soda solution and rinse with boiled water. Then place the glass in the oven and dry it at 120 degrees. Boil the lids for several minutes.

Place spices in sterile jars: bay leaf, cloves and black peppercorns.

7. After sterilization, tightly screw the lids on the jars and leave to cool at room temperature. Next, put it in storage.


This amount of ingredients yields 2 jars with a capacity of 1 liter each.

So, for a 3 liter jar you will need: tomatoes on average 1 kg; dill 10 grams; bay leaf 3 pcs.; apple cider vinegar 6% 70 ml; allspice and black pepper, cloves to taste; peeled garlic 3 cloves; salt, sugar 1 tbsp. spoon; water 1.2-1.3 liters; honey 50 grams.
